The Case for Dual Extraction: Why One Solvent Isn't Enough

Here's something most people don't realize until they've looked into it: a mushroom's most valuable compounds don't all dissolve in the same liquid. Some only come out in alcohol. Some only come out in hot water. If you extract with just one, you're leaving a real, measurable share of the mushroom behind — no matter how good the mushroom itself was to begin with.
That's the entire case for dual extraction, and it's why we run every batch through both an alcohol extraction and a water extraction before we ever combine anything into a bottle.
The problem starts with the cell wall
Mushrooms are built differently than plants. Their cell walls are made largely of chitin — the same tough, fibrous material found in insect exoskeletons and crustacean shells. Chitin is difficult for the human body to break down on its own, and it locks a lot of a mushroom's beneficial compounds inside cells that pass through your digestive system largely unopened.
This is the part that a lot of "just eat the mushroom" or raw-powder-in-a-capsule products quietly skip past. Grinding a dried mushroom into powder doesn't break down chitin. Without some form of extraction — heat, solvent, or both — a meaningful share of what's inside those cells never becomes available to you at all.
What water pulls out
Hot water is what breaks chitin down enough to release one of the most researched groups of mushroom compounds: beta-glucans, a type of polysaccharide. This isn't a new discovery — it's the same reasoning behind centuries of traditional Chinese medicine decoctions, where medicinal mushrooms and herbs are simmered in water, often for hours, before the liquid is used. There's a reason that tradition never shortcuts the simmer time: it's doing real extraction work.
Beta-glucans are water-soluble, meaning alcohol alone does a comparatively poor job of pulling them out. A tincture made only with alcohol can look and taste like a mushroom product while actually containing very little of this particular compound family.
What alcohol pulls out
Alcohol does the opposite job. It's what draws out triterpenes and a range of other
alcohol-soluble constituents that hot water can't efficiently extract — compounds that matter for the reasons people reach for mushrooms like Reishi in the first place.
This is the basis of the Western herbal tincture tradition: high-proof alcohol as a solvent specifically because of what it can dissolve that water can't.
Run only a water decoction, and you get the beta-glucans but miss this entire other category of compounds.
Why we run both, in sequence
This is the reasoning behind our own process: a 16-week alcohol maceration first, pulling out everything alcohol-soluble, followed by a full 6-hour water extraction of that same spent mushroom mass, pulling out the beta-glucans and other water-soluble compounds left behind.
We then combine both extracts into one solution. (We wrote about the full step-by-step process in an earlier post, if you want the complete walkthrough.)
Neither extraction on its own would give you the full picture of what that mushroom had to offer.
Together, they do.
Why more producers don't do this
Time and cost, mostly. A single alcohol tincture can be macerated for a few weeks and bottled.
A water decoction can be simmered for a few hours and used the same day. A true dual extraction means running both processes, on the same mushroom mass, sequentially — which is part of why our own process takes about four months from harvest to bottle. It's slower, it's more labor, and if you're buying bulk extract from a distributor rather than growing and extracting your own mushrooms, you often don't even know which method — or combination of methods
— was actually used upstream.
We think that extra time is the whole point. A dual-extracted tincture isn't a nicer story than a single-solvent one — it's a more complete one, compound for compound.
